New Mommy Muffins

Usually when you see ‘new mom’ and ‘muffin’ in the same sentence, you expect the next word you see to be ‘top’. Losing the baby weight is a real challenge for lots of new moms, not just because its challenging to lose weight, but more so because there is no time! Pre-baby, I spent more time in the kitchen than the average person, and I probably still spend more time in the kitchen than the average new mom, but I’m finding it challenging to dedicate enough time to eating a well balanced diet (I’m not sure my trainer would approve of a spoonful of peanut butter as a meal!).

Make ahead, eat-with-one-hand snacks and meals have been a real life saver over the past few months. Without a stash of smoothies in the freezer, I probably would not eat breakfast most days. I’ve been experimenting with other healthy one-hand friendly foods (since the other arm is ALWAYS occupied!), and after a trial batch or two, I’ve decided these new mommy muffins are a winner. Thanks to a few other new moms who were my guinea pigs and approved of these as well!

Bonus points for the one bowl prep and clean up!

Blueberry Bran Muffins

2 cups All-Bran cereal (original)
2 cups 1% buttermilk
3/4 cup unsweetened applesauce
3/4 cup splenda brown sugar
1/2 cup liquid egg whites
2 tsp baking soda
2 cups all purpose flour, plus 1 tbsp, separated
1/2 tsp salt
2 cups fresh or frozen blueberries

  1. Preheat oven to 375. In a large mixing bowl, combine all-bran, buttermilk and applesauce. Stir to combine and let sit for about 5 minutes, or until cereal is very soft.
  2. Using a wooden spoon, beat in brown sugar and egg whites, then stir in flour, baking soda and salt.
  3. In a separate bowl, toss blueberries with reserved tablespoon of flour until roughly coated (this will keep your batter from turning purple!). Fold into batter.
  4. Spray muffin tins with cooking spray, then spoon batter into each cup about 3/4 full. If you are making full size muffins, bake for 15-17 minutes, or until a toothpick comes out clean. If you are using mini muffins, bake for 11-12 minutes or until a toothpick comes out clean. Makes about 24 full size muffins or 72 mini muffins.

Full size muffins: 94 calories, 1g fat, 2.3g fibre, 8.3g sugar, 19.9g carbs

Mini muffins: 31 calories, 0.3g fat, 0.8g fibre, 2.8g sugar, 6.6g carbs
